A lovely salad full of Greek flavors. It is meant to be enjoyed as side dish to a main course, or by itself with a few loaves of crispy warm bread. We felt like trying it for a while now, especially that spring is here and that calls for salads :), so we went out, bought the kalamata olives and a cucumber (we had the rest of the ingredients) and returned home with a mighty cooking energy! We enjoyed this salad in a pretty and warm evening, next to some rosemary potatoes and fresh bread. If you take the little time to make it, you'll enjoy it too :).
Ingredients (serves 2):
- 75 g Greek feta cheese
- 2 medium tomatoes
- half a large cucumber (one of those giant ones)
- a handful of kalamata olives (100 g)
- 2 tablespoons olive oil
- 1/2 teaspoon salt
- 1 teaspoon pepper
- juice from half a lemon
- 2 garlic cloves
- 1 teaspoon dried oregano
- 1 small red onion
Cut the cucumber in thick slices, and then each slice in quarters and add them to the salad bowl. Also add the kalamata olives:
Chop the garlic cloves and add them too. Also add the oil, salt, pepper and oregano:
Cut the feta into small cubes and add it too. Mix well:
To finish, cut the red onion into fine half-rings or rings and decorate the salad all over with them. It's done, dig in! :)
