Colcannon (Irish mashed potatoes and greens)


A classic and homey Irish side dish (or even a main) of mashed potatoes with green speckles, green as the lovely Ireland herself :). Happy St Patrick's Day! :)

I love it. If you haven't tried it yet, take my example (and instructions) and do. Enjoy :)

Last year: Turkey pieces in emmentaler sauce.
Two years ago: Orange caramel pastry windmills, Parmesan cream potatoes and Vegetarian chili tacos with avocado salsa (Mexican).




Ingredients (serves 2):
  • 700 g potatoes
  • 150 g mixed kale, spinach, broccoli leaves 
  • a thick slice of butter (25 g)
  • 50 ml milk
  • 1 teaspoon salt
  • 2 teaspoons freshly ground pepper

Boil the potatoes, peeled or whole, in salted water, until tender when pierced with a fork. (If you're in a hurry, you can dice them before boiling so they're ready faster.) Once they're done, add the chopped veggies to the pot. Remove from the heat, drain the water and start mixing and mashing everything together :)

Also add the milk and the butter to make things easier.

Also add the salt and the pepper. Taste and add more, if you want. Transfer to serving bowls and dig in! :)
