Turkey pieces in emmentaler sauce



This was a very creamy and cheesy treat. Little bits of fried turkey slow cooked in a white wine, cream and emmentaler cheese creamy sauce, flavored with thyme and that comes together in a lovely consistency towards the end of the cooking process. Not too complicated to make, perfect for a relaxed afternoon. Pair it with toasty crunchy bread.

Last year: Green apple and peanut butter muffins, Brie, walnut and caraway salad, Orange caramel pastry windmills and Parmesan cream potatoes


Ingredients (serves 2):


  • 450 g turkey breast
  • 2 tablespoons flour
  • 2 tablespoons olive oil
  • salt and pepper
  • 200 ml cream (30% fat)
  • 50 ml white wine
  • 1 onion
  • 2 teaspoons thyme
  • 50 g emmentaler cheese




First of all, cut the turkey meat in cubes. Mix the flour, salt and pepper and place it together with the meat pieces in a bag. Shake well to coat every piece:


Heat the olive oil in a small/medium pan and start frying the meat:


Meanwhile chop the onion and add it too:


Let them both fry some more (until the onion is golden, but not browned). Then add the wine and thyme and let it cook until the liquid reduces by half (5-8 minutes). Then add the cream:


Let the whole thing get cooked some more until the liquid is again reduced by half (about 10 minutes). Then add the emmentaler cheese, grated or torn into small bits:


Turn off the heat and mix well until the cheese is melted and the sauce thickened. Divide into serving plates and dig in! :)
