Winter wheat berries soup with capers (vegan)


High source of fiber and winter veggies and a great way to use whole wheat. It tastes delicate and sweet with a hint of sour from the capers and a hint of spicy from the ginger used for the stock. 




Ingredients (serves 4):
  • 1 liter of vegetable stock
  • all the vegetables and solids from the vegetable stock
  • 200 g whole wheat, chopped or not
  • 60 g capers

Just reheat the stock if it's cold or add the wheat in it right when hot. Leave to simmer for 20-30 minutes, then  put in serving plates:


 ...and put about 15 g capers in each. Serve warm, dig in! :)
